Would considering taking a job that would limit one’s attendance at weekly Mass be considered a sin? No. I wouldn’t consider considering a sin.

On this specific question, dinosaurs, and many other organisms, are not men.

Wherefore as by one man sin entered into this world, and by sin death; and so death passed upon all men, in whom all have sinned. – Romans 5:12 (emphasis added)

The passage can be interpreted to refer to the death of men, not of animals or plants.
