If Lay Ministers can't give blessings, what the point of coming forward?

I understand only priests (and I assume deacons) can only give blessing during mass. With all the Extraordinary Ministries of the Eucharist serving at mass, what is the point of someone coming forward for a blessing? The Extraordinary Minister can’t give them a blessing. What should they do? Jump to another communion line?
 
Technically speaking, clergy should not be imparting blessings during the communion procession either. (More info on that: here).
Individuals who are not receiving communion can either remain in their pew or they could walk in the procession but when they approach the person distributing communion they can just pause to bow their head and continue to walk right on by. The first option is preferable but sometimes its not practical given the layout of some parishes.
