In a zombie apocalypse, you must defend yourself. But are we to think of our selves as killing people? If it can be avoided, should we not kill a zombie because they are people?

I say they are no-longer people.
I think that if they already died, then they are no longer people as their souls would have left their bodies. And like others have mentioned, you would be trying to defend yourself. If you could barricade yourself with enough food and water, a little plot of land to grow vegetables, a book learning how to can/dry foods, natural remedies, making bullets, cooking over a fire, etc., you can wait out the zombies until they rot away to a point where they can’t walk around and then just be on guard for the few walkers that haven’t fully decayed.

That said if you are part of the Walking Dead universe, everyone is infected and you have to be careful about your own dying from natural causes and turning. If you are able to find scientists and doctors, they might be able to find a cure.

I always thought that a walled-in monastery or cloister would be a great place to stay safe and be self-sufficient… at least from the walkers. From other humans, that’s another story.
