I attended a confirmation Mass and noticed a sponsor, someone I’ve known for many years, who is Jewish. I asked if that individual converted and the answer was no. The family (knowingly) did not inform the parish that the sponsor is non-Catholic. So is the confirmation of that child valid?

Yes. The validity of the sacraments of initiation is not dependent on the faith of a godparent or sponsor. But it was certainly inappropriate to have a non-Christian as a confirmation sponsor, and I recommend informing the pastor that the parish needs to be more diligent in establishing the qualifications of baptismal and confirmation sponsors.
