I also know some jews have special practices like not using electricity or only walking to the temple on the sabbath. Are there certain practices like that for Catholics on Saturday or Sunday?

There may be a confusion of words here. Sunday is the Lord’s day, and sometimes also called (by Christians) the Sabbath.
I understand that Jewish practice calls Saturday the Sabbath.

As for special practices-- Catholics attend Holy Mass on Sunday. We avoid doing unnecessary labor on Sunday.
I can’t speak for all the non-Catholic denominations.

Edit to add: the first generation of Christians made the distinction between the Sabbath, which Jews held holy, and the Lord’s Day the day after the Sabbath, when Christians gathered to celebrate the Lord’s Supper (the Mass).

Many Protestant churches call Sunday the “Sabbath”, but the Catholic Church doesn’t. In Ecclesiastical Latin, Sabbatum is Saturday. Sunday is Dies dominica, the Lord’s day.

In Hebrew, Saturday, Shabbat, is the only day of the week that can properly be said to have a name of its own. The other days are just numbered, from “first day” (Sunday) through “sixth day” (Friday).

In the earliest days of the Church, the Christian day of worship was switched from Saturday to Sunday, “the first day,” commemorating the Resurrection (Acts 20:7 and 1 Cor 16:2).

I stand corrected, and thank you. 🙂

From the Code of Canon Law:
Canon 1247 On Sundays and other holydays of obligation, the faithful are obliged to assist at Mass. They are also to abstain from such work or business that would inhibit the worship to be given to God, the joy proper to the Lord’s Day, or the due relaxation of mind and body. (source)

I’m aware of attending mass and not working but that just feels like the bare minimum are there are other things we’re supposed to do or not do?

We Catholics have an obligation to go to Mass on Sundays and to avoid unnecessary work. Other than we have no obligations/restrictions. Judaism has many things which are prohibited on Shabbat. The full restrictions are observed by ultra-orthodox and orthodox congregations. Conservative, reformed and liberal congregations may not observe the complete list.

The list of restrictions is quite comprehensive. Where I live we have a very large Jewish community and I have quite a number of friends, acquaintances and colleagues who are Jewish. I recall being told by a very dear friend (RIP) that the Chief Rabbi in the UK had issued an official ruling that ladies could carry a handbag on Shabbat.
