Knowledge or lack of knowledge of basic principles

What are the most basic principles that we do not know in physical science?

One example: do we know the essence of dark matter?

One more, do we know the essence of gravity?

If my examples are already knows, then perhaps there may be other basic things that we as humans do not know.

Just the principles is what I am hoping to see.

The most basic principle of science that we do not “know” would seem to be the scientific method. In other words, we don’t “know” that the scientific method works (or will continue to work), but it seems to have been pretty reliable and so that’s why we use it.
