Kombucha advice

My Kombucha tea is not fermenting! I have lovely scoby pancakes growing and thriving, but the tea itself refuses to ferment and get fizzy. It has been several weeks, and the tea is still sweet. Could it be that the cold temperature in my kitchen is slowing the fermentation? Any Kombucha experts out there?
 
I shut down my production because of the cool,weather… I recently had a brain storm but am facing some surgery and don’t want to get back into production mode until I get through the surgery because I brew about 9 gallons at a time… here is my email address it will be easier for us to converse and I can give you some tips…

It is on the kitchen counter near an outside wall. I would guess the temp is high 60s. I moved it to the oven and turned on the oven light (not the oven heat) to see if the warmth would help the fermentation.

Need about a 68 degree environment…try a heating pad. Under a plastic tote with a Cover over it. When you go though your first 7 to 14 day fermentation you shouldn’t have any problems with explosions BUT when you bottle and add fruit you will. The next 7 to 14 day fermentation can explode…I keep bottles in a covered tote also on a heataing pad on low or close to a hot water heater or a furnace exchange or an electric radiator heater. You don’t want the tea to lose moisture but to stay dry. I have also bought a seed warmering tray it sets under dirt filled potting soil to start plants in the spring. The fungus and starter tea won’t grow in temperatures below 65 ish…I gave up in Oct because didn’t have the room where I was living and hubby and I drink a gallon or more a day. So I usually have 3 large pots that hold 2-3 gallons of tea brewing at a time.
The recipe is very forgiving and not an exact science. I throw in 10 black tea bags into maybe 8 cups of water and boil (take out bags and dissolve 3 cups of sugar in the hot tea ) then I add another 2 gallons of water more or less…so you don’t need to boil 3 gallons of water and tea together ( understand)?
So it’s about 3 gallons of water 10 tea bags and 3 cups of sugar…every one LOVES the way my tea tastes I can measure exactly for u if u wish…lol

I’ll share flavors, times, recipes and explosions lol ask away emails are easier I check more often… this forum is new to me… lol
