However everyone assumes it wouldn’t have been said in Latin until way after. That’s probably false.
No; greek was the norm for the church of Rome itself until the third to fourth century transition to the vernacular . . .
Mass was probably being said in Latin in areas by the end of the first century, possibly even during the apostolic age by apostolic fathers who converted to the faith from Latin speaking areas further west where Greek wasn’t as widespread spoken but Latin was.
Indeed-- celebrated in the language spoken locally!

I would say let’s be careful here. The Greek Creed is different from the Latin Creed, enough to cause a major schism within the Church. To say or imply that it doesn’t matter what language the Mass is said ignores the nuances and theological differences among the various tongues. I’ve often said in order to be a serious scholar of the Bible, you have to study Hebrew and Greek. To pick your favorite English version just corrupts the meaning IMO.
