What exactly is a lay apostolate, what do they expect of you, and what are some of the best (if that’s the right term to use) of them?

A Lay Apostolate is a endeavor organized for lay people to perform that is designed to foster Christianity (in some form).

Each lay apostolate should have a mission or objective that is clearly defined that they work towards. This can vary significantly from improving the quality of our families, to feeding the poor, to ministering to tired priests, etc.

I only know of Madonna House lay apostolate founded by Servant of God Catherine de Hueck-Doherty. To make it simple, it is an apostolate who takes the vow of poverty, chastity and obedience. They live poor with the poor. They receive a cross that singles them out as as religious lay people. The Association is also consisted of priests, associate priests.

Does this help?
