Lenten Friday Dinner with Guests Question

My son and his wife and baby son will be visiting this Friday and will have dinner with us. Our son and daughter-in-law do not seem to observe any fasting on Fridays - our son is lapsed as far as I have observed (it’s not something I can talk to him about, long story) and our DIL is a baptized Protestant and doesn’t fast.

So, any ideas of what I should provide for dinner? This is the only night we have to see them as they are visiting her other family members on the other days while they are in the area.
 
Do you mean fast as in Eastern fast, or just abstain from meat as Western Catholics do?

There are tons of great fish, seafood, egg, bean, salad etc dishes out there… veggie pizza, pasta, pasta salad, potato salad, etc…

If they’re not allergic you could grill shrimp…

It’s a great time to eat fish or shrimp dishes in my humble opinion.
 
I’m sorry, I mean abstinence. I was stuck on the word fast for some reason.

Yes, I have no trouble with cheese, beans or vegetables or fish. Problem is that they do not like fish at all … and the other ingredients are just part of their typical meat dinners.
 
Shrimp and Grits

Gumbo

Baked Salmon with dill

Smoked Salmon

Baked Cod/Fried Cod ala “Fish n chips”

Veggie pizza

Grilled cheese with home made tomato soup.

Potato Cheese soup.

Cheese Ravioli.
 
Go out to eat.

Order in pizza. Have a veggie pizza and a meat lovers. You eat the veggie pizza.

Black Bean Chili is really good.
 
Vegetable Lasagna. Lots of cheese, and lots of vegetables, no one will care about meat. Can be made earlier, dishes washed, kitchen cleaned up and baked for dinner later. 🙂

The only problem now is that I’m hungry!
 
You can get fake ground beef and make chili. They won’t be able to tell the difference. I also used it to make Spanish rice so our daughter could eat it (she’s developed an allergy to meat). Hubby didn’t notice the difference either.

Oh, and I also made this to serve at a dinner theatre where 3 of the patrons were vegetarian. They loved it.


Served with a salad and rolls, it makes a great meal.
