Literalist vs Literal interpretations

In a discussion on the Eucharist being the body, blood, soul and divinity of Our Lord, someone has suggested that this is just metophoric. Specifically sited were the following examples:

John 8:12 - the light of the world
John 10:7, 9 - the door
John 10:14 - the good shepherd
John 15:1, 5 - the vine

Can you please tell me how you would answer this?

Nowhere does Jesus hold up a vine and say, “This is my body”.
 
In John 6:35-51, Jesus does use a metaphor when he says, “I am the Bread of Life…” but he goes on to explain that the bread metaphor means his flesh which those who wish to enjoy eternal life should eat:
51I am the living bread which came down from heaven; if any one eats of this bread, he will live for ever; and the bread which I shall give for the life of the world is my flesh."
