Looking for a Chesterton metaphor on Race Horses

I am reading “In Defense of Sanity.” If memory serves, in one of the essays Chesterton talks about the concept of absolute religious Truth vs. relativism, and he uses a horse race metaphor. The metaphor is something to the effect of ‘everyone has a favorite horse that is sure to win before the race begins, but in the end, only one horse is the winner.’ Can anyone help me identify which essay this is from? I’ve been flipping through the pages hoping to find it, but no luck so far.
 
I found it…it’s in “Don’t” from 1910, and it’s listed in item #4. All I had to do was ask myself a question on Catholic Answers to get the answer.
