Missing Confession Because of Sickness

If I miss confession and all opportunities to see a priest because of sickness, like the flu, then will I be forgiven by God without seeing a priest?

With an act of perfect contrition, yes, but you’re supposed to see a priest anyway when you are able to after you make it.

And in that rare instance where you don’t get better your priest will come to you.

You make an act of contrition, then go to Confession when you are well. You simply refrain from the Eucharist until you can to to Confession.

Yes, and if you’re too unwell to go to confession you are likely too unwell to go to Mass.
