Missionary activity in Eastern Christianity

I was wondering if anyone could enlighten me as to how missions work in Eastern Catholic and Orthodox traditions. For one, what sort of mission activity is there? As I had understood that eastern churches, as national entities, minister to specific people groups I wasn’t sure exactly how this got lived out in evangelizing other nations/cultures. Also, of most interest to me is how the new converts’ relationship to a national church is to be understood, since many would not be members of an eastern nation (not many Greeks, Russians, Iraqis, etc. in sub-Saharan Africa, for instance). At what point does a new national church emerge? Thanks for any insights.

This is not quite what you are enquiring about but it may be useful all the same.
