What are the diets of different orders? The only thing I know is that Carthusians are vegetarians out of the vow of poverty. How about other orders?

And are there any special monastic diets? I’m especially wondering about the Carthusians – do they just eat cut vegetables, or do they prepare them in a special way? I’d guess they’re just served without anything special, since the Carthusians are supposed to have such a harsh discipline.
 
The Discalced Carmelites also do not eat meat because of the vow of poverty (which can be waived for health reasons). They can, however, eat fish, dairy, eggs, etc. Normally, the nuns serve themselves according to their portion during meals. From September 14th (the Exaltation of the Cross) to Easter, they have only a measured amount (collation) and they fast from eggs and dairy on Fridays.
