This thread is for all of us who won’t be able to spend Thanksgiving with our relatives this year because of Covid, or any other reason you may have. We still have our family in spirit, here at CAF, too.

Let’s have our own party, a sacred meal online in Thanksgiving of this wonderful USA and the wonderful people who live here. All of you out-of-towners finally have a chance to crash an American holiday, too!

Please share anything Turkey-day themed; a recipe, a prayer, a story or a tradition, a joke or a meme.
Check your masks and politics at the door. This is where the pilgrims and natives come together to share God’s land, bounty, and blessings, because ultimately we are all patriots.

Here is my famous Sweet Potato Casserole recipe:
(Well actually its not mine. It’s a friend’s from Mississippi) hoooooweee it GOOD!

SWEET POTATO CASSEROLE

Ingredients:

3 cups mashed sweet potato (canned is fine)

3/4 cup granulated sugar (white)

2 eggs

1/2 cup melted butter

1 tsp. vanilla

Topping Ingredients:

1 cup brown sugar

1/3 cup flour

1 cup chopped pecans

1/3 cup butter

Directions:

  • Mix first 5 ingredients and pour into buttered casserole dish. (Use small casserole dish for single recipie, or a 9x13 for a double recipe.)
  • Mix topping ingredients until crumbly and sprinkle on potato mixture (try to cover the top completely)
  • Bake 30 minutes at 350 degrees

I was just thinking about looking for a different recipe for sweet potatoes this year! I copied it into my notes and will be making it! Thank you! Another task checked off the list! 😂😂😂

Party pooper here…just made pumpkin pie and stuffing in advance.
With thousands dying and even more mourning…I don’t feel at all like celebrating.

I realize that parents with children must carry on.

We should give thanks but the usual festive feeling for the day is sort all gone.

Hi Donkey, I hope you are able to spend it with some people you love. I guess my biggest sadness is the many broken families and loneliness felt by the majority of our country. 😥 So many people living alone, or estranged from family.

We are in quarantine over here. I think we might just go on a hike and decorate the Christmas tree. Im going to make my caramel banana cheesecake.

I caught a rabbit yesterday.

I’m making slow-cooked rabbit with potatoes, rosemary, mint, and parsley.

Not alone but certainly not with the usual crowd. We definitely will be outside for a walk before and after dinner.
 
Sounds delicious!

My grandpa used to take us to Black Forest Inn where they served delicious Hausenpfeffer. It had a potato pancake with it, and I’ve never been able to recreate a potato pancake… any recommendations? I know you are a master culinary artist.

Sinful potatoes:
2 lb frozen hash brown potatoes, thawed
1/2 cup melted margarine
1/2 tsp salt
1/4 tsp pepper
1 can cream mushroom soup
2 cups grated cheddar cheese
1/2 cup chopped onion
2 cups sour cream
Bread crumbs
9 x 13 pan. 350 degrees 1 hr
Combine all ingredients except bread crumbs. Mix well. Spread in pan. Top with bread crumbs(I use seasoned bread crumbs). Bake at 350 for 1 hour.

I’ve made lots of different stuff as a hobby. Haven’t done potato pancakes yet.

On the subject of potatoes, I am very handy at making potato knish disappear, preferably with plenty of mustard.
 
My wife and I continued our tradition of spending Thanksgiving at a long time family friends home. The big difference this ;year being that his wife passed away last June from an ear infection that went into her brain. Her death wasn’t covid related, but she neglected going to the hospital until it was too late because of covid, and passed away 6 days later. Sort of a nightmare scenario, IMO.

At any rate, we’ve been having her husband over for dinner every Saturday night since then. He’s been working from home so it’s one of his few real life human interactions during the week and the entirety of our social life since we don’t go out to eat anymore.

He still wanted to have Thanksgiving at his house. In years past he’s cooked a turkey on his smoker and they’ve turned out really tasty. As he said, it would return a little bit of a sense of normalcy.

It was obvious the poor guy hadn’t had a very good day. He was visibly distracted and sad. He’s been heroically stoic up to this point, but yesterday was a tough day for all of us. I ended up whooping up the mashed potatoes for him, he was having such a tough time.

We had an excellent repast with an obscene amount of food. There was just the three of us. Normally his daughter and her boyfriend would have joined us but they’re living in Germany. We did a short facetime call with her though.

Here’s a photo of our spread. I cooked everything but the turkey and the mashed turnips (but I provided technical assistance). As my brother said, “Looks like the turkey is cooked perfectly!”

Items clockwise from the mashed potatoes in the metal pot at the top are, mashed potatoes, green been casserole with fresh green beans and portabella mushroom soup, oyster and duxelles dressing, mashed turnips, pecan pie, basic dinner rolls from an ancient Better Homes & Gardens cookbook, a strawberry pie made from frozen Oregon strawberries and cranberry chutney.

No wonder we keep getting invited over for Thanksgiving. 😃
