I have a question.

Why do we follow some OT law such as against incest (Leviticus 18).

Yet other OT law like eating pork we don’t follow anymore (Lev 11)?
 
Maybe someone else can expand on this, but the *general * rule we find in the New Testament is that while we are no longer bound by the liturgical or dietary strictures of the OT, we are still held to it’s moral standards. If anything, this shows that while some requirements are for a certain time and place, morality is forever.

Incest is against natura law, cannot be changed. Eating pork or any other food is not against natural law. Abstaining from it is a way of showing your loyalty to a particular group, in this case, the Jews.
