I am divorced civilly but I do not have an annulment. I went to a priest and talked to him about if I were to have sex with my ex-wife if that would be a sin. He asked if we were still married in the church. I said yes but we have a civil divorce. He told me that it is not a sin we are still married in the church.

What do y’all think?

Technically correct, although having sex would (morally) involve forfeiting any right either of you have to remain separated, and could entail an obligation to re-unite for the good of the children.

IOW, don’t do it unless you plan on getting back together. Though if you are planning to do that, it isn’t strictly necessary to wait until you’ve been civilly remarried.
