I think last.fm has some Gregorian chant and polyphony available for listening to over the internet.

Believe ir or not, try Vatican Radio. You can find it at:

www.radiovaticano.org

Now, don’t be shocked if you hear some contemporary secular songs scattered throughout the broadcast. It was a little funky listening to Vatican Radio and then all of a sudden hear Fleetwood Mac, the BeeGees, Michael Jackson  , Duran Duran 👍 , Dolly Parton  and even the Black-Eyed Peas, but, I actually enjoyed it. I managed to get the best of both worlds. Their English news department is also exceptional. When Katrina hit, I got better coverate from Vatican Radio than the drive-by media.

You will hear the office chanted at about 11AM (central time) and then at about (3PM) you will hear night prayer chanted. At 1PM (central time) you will also hear the recitation of the Holy Rosary in Latin.

Of course, you will also hear live (Rome time) broadcasts of all of the Papal events, which do feature liturgical music and Gregorian Chant.

You can also look at the Vatican Website and click onto the Office of Liturgy for the Supreme Pontiff. They have a link to some online recordings done by the Sistene Chapel Choir. Granted, these are in Italian, the music is still beautiful.
