Some of the channels on YouTube I know of that have Catholic hymns with organ are Francis1930 - lots of English hymns as he’s an Englishman I think TradOrganist - a church organist with lots of recordings of the hymns & chants at his church Marco Echeverría - lots of videos of Latin chants and such with organ accompaniment on most of them Christian Hymnal - mostly organ accompaniment videos. Many Protestant hymns but Catholic ones are in there too.
On Spotify there’s OCP Session Choir. Not every piece is with organ but the ones that do have it are decent. There’s also John Keys and Andrey Jackson for just organ accompaniment.

I am assuming you are an organist and are looking for music you yourself can play during Mass. If not, I apologize for my misunderstanding. (There are various CDs available to buy if you just wish to listen to these hymns yourself).
My own parish, the Cathedral of Our Lady of Walsingham - Catholic Church & Shrine, uses the Hymnal 1940 of the The Episcopal Church. For whatever their theological faults are, the Episcopalians know excellent hymnody in and out.
I own a copy of the Adoremus Hymnal published by Ignatius Press.
I mean - is it just to enjoy listening to organ music? Are you an organ student? Are you doing research for something? Do you want to pray along with it in some particular way? Do you want it in some particular genre (of Catholic hymns)?
