Correct me if I am wrong, but it seems to me that there must be official documents from the Vatican containing the original Latin that various publishers use when creating editions of the Missal, Breviary, and Ritual. Where can I find such documents? Is there a PDF that I can download from vatican.va like I can with Papal encyclicals?

you can access the Latin breviary in the iBreviary app.

The missal is available hardcover from many sources, digitally I think you can find it on the Musica Sacra site. Google "Missale Romanum 2008 . it is probably somewhere on Vatican site as well but don’t know where

I don’t know very much but I do believe the Breviary/Divine office/Liturgy of the Hours differs slightly as to which country you wish to use it for just in case you don’t know that. That is it is different for US than for UK for instance, so if you wish the use the Breviary make sure it is for your country.
