I can see in Scripture and in Sacred Tradition where the Bishop of Rome is the earthly head of Jesus’ church but not that he is divinely protected from error when certain conditions are met.
Do you not know of Christ’s mandate?

The divine Son of God who founded His Church on Peter:
All four promises to Peter alone:
“You are Peter and on this rock I will build My Church.” (Mt 16:18)
“The gates of hell will not prevail against it.”(Mt 16:18)
I will give you the keys of the Kingdom of heaven." ( Mt 16:19)
“Whatever you bind on earth will be bound in heaven.” (Mt 16:19)

Sole authority:
“Strengthen your brethren.” (Lk 22:32)
“Feed My sheep.”(Jn 21:17).

It was Jesus, God the Son, who said to His disciples “he that hears you hears Me” (Lk 10:16) even before the foundation of His Church – how much more infallibility can you have?

Vatican I is explicit in *Pastor Aeternus *-- for infallibility to be exercised the Pope must teach:
(a) ex cathedra (from the Chair of Peter), that is as Shepherd and Teacher of all Christians,
(b) speaking with Peter’s apostolic authority to the whole Church,
(c) defining a doctrine of faith and morals.
