Hello there!

I am a Roman attending a Melkite parish, and I was wondering if I have to change churches in order to participate in the liturgical ministries of the Eastern parish, such as the choir, altar serving, lectors, etc.

Generally, no. If you’re just participating in these ministries as a layman, then no change is required. Were you to be tonsured as an acolyte or some other ministry, then you’d need to belong to that particular Church. I am a Roman seminarian and I have served, cantored, and lectored at various times at various Eastern liturgies.
