I was wondering if you are doing a personal fast or abstaining (outside of lent) should you break your fast on Sundays and other feast days? Or is it okay to fast on those days?

If it’s a “personal fast”, you can create any perimeters that you feel like.

As Canon Law says Friday penance does not need be observed when a Solemnity falls on a Friday, my inclination is to not do those things on Sundays and Solemnities.

There are 6 other days of the week to fast. 🤷

I wouldn’t do special penances on Sundays. The Church has always discouraged it.

The great thing about being Catholic is that there is a season for everything.

You can do anything you want about personal fasts. You are not bound and you may break them any time you want. There is no sin there.
