the princess and the pea is a fairy tale, medieval European, not one of Aesop’s fables. He was a Greek moralist and story-teller. There are several popular children’s versions of his fables, which are short tales, usually involving animals as characters exhibiting human character traits, each of which teaches a simple moral lesson. One of the classic versions is illustrated by Arthur Rackham. The hare and the tortoise is an example the the moral is “the race is not always to the swiftest.” Some of the morals taught are also evidenced in literature of other cultures, such as the book of Proverbs of the Hebrew Scripture.
Andrew Lang’s fairy tale collections, blue, green, red etc. are anthologies of fairy tales and fold legends from various cultures, English, German, Scandinavian, Slavic etc.
