Poll: how many fans of frog eye salad can I find?

Okay, so, since it is about to be Thanksgiving, I wanted to ask whether there are any other fans of frog eye salad out there. I mentioned it on another thread, so you guys will know that this is a firm favorite with my family. I am curious partly because I know that this is to some extent a cultural/regional phenomenon. For those of you who are unaware of this particular delicacy, I can assure you that it does not involve actual frogs and it is not really a salad either!

Hmm. I can’t answer the poll because I’ve never had this, but it resembles other things I eat and enjoy (pink cloud salad, fluff salad, certain styles of ambrosia…)
 
If it’s the ones I’ve had, it’s tapioca based and wonderful!

We make it with acini di pepe pasta, but a lot of version do use tapioca. Some people claim that you can use couscous, which sounds a little weird to me, but I guess it’s not really any different.

It’s one of those things for which there are probably as many recipes as there are families who make it. The main ingredient is, as I say, either acini di pepe pasta (tiny pieces of pasta which are technically cylindrical but basically look round), tapioca, or (apparently) couscous (never tried this version). These are the “frog eyes”. You combine the cooked, cold pasta with a custard mixture typically made with eggs, pineapple juice, flour, sugar, and salt. You then combine with fruit (usually tinned pineapple and mandarin, but you can also add bananas and cherries) plus marshmallows and sometimes coconut. You can top it with whipped cream and more fruit. There are a lot of different recipes you can find, but the basic elements are the pasta (or tapioca), custard mixture, and fruit, plus the marshmallows and coconut if you like it and the optional cream topping. It’s quite quick to make, but you do have to refrigerate it for a long time, so probably too late to make it for this Thanksgiving unless you live in Hawaii (most people get started the night before).
It looks like ambrosia?
It does, but it’s not ambrosia. The main difference is that frog eye salad contains pasta/tapioca/couscous (still skeptical about that one) and custard (egg mixture). I think of ambrosia as more of a Southern thing, whereas frog eye salad is more of a Mountain thing.
 
It’s not the “official” version, but I have certainly heard of people using that if it’s what is available. I’ve never tried it myself, so I can’t personally vouch for it, but at the end of the day, what can really go wrong? It’s not an haute cuisine dish that has to be done just so… Think less Joël Robuchon, more Mormon potluck. Like I say, some people don’t even use pasta. I’ve even heard of people using Cool Whip instead of making the custard, though I think that sounds horrible! You can add whatever fruit you like.

I can see it if it’s giant couscous (aka pearl couscous or Israeli couscous), but fine or medium couscous…not so much. 🤨
