No, I cannot give you chapter-and-verse right now. But I can say that it is (at least it was) the custom. Perhaps another poster with better resources can fill that in. The best I can do for the moment is from The Ecclesiastical Review which says:

It is no longer prescribed because the canons on rings have been removed in the 1983 Code. However, there are a few directives here and there. It is better to not wear a ring with a large stone since that would be too similar to a bishop’s or abbot’s ring. (Although, I was writing a piece for which I contacted a number of bishops and abbots across the States and Canada and here at lest, rings with stones are going out of fashion in favour of engraving or bas-reliefs).

Indirectly it would seem that wearing a ring at Mass would be discouraged because *Pontificalia Insignia *restricts the wearing of pontificals to certain higher prelates, and the ring is part of the insignia. I suppose, though, it could be argued that a ring is permissible if it is a simple band and wouldn’t be confused for an episcopal ring.
