Salaam Alaikum

I have a question regarding symbolism. What does the Crescent and the Star represent/symbolize?
 
I believe the Ottoman Empire used it first and that was 100s of years after mohamed death

maybe its symbolize the month of ramdan because by the moon we know if we enter and end that month !

Crescents used on the minaret of Mosques to show the time of the prayers

Nothing. Just cultural stuff. Just like greec or European architecture influenced the building of churches . They have nothing to do with christianity.

I believe the OP was asking what it meant to the Muslim.
 
It was first adopted by the Ottomans. In fact, it’s against the religion to have such symbols, since any form of image/symbol is very taboo in Islam. Hence the destruction of so many icons when the Muslims entered the Byzantine lands.

I’m not sure regarding the basis for the crescent + star combo, but I believe that Muhammad and the early Muslims wouldn’t have supported it. This is reflected in the flags of the early Muslim armies which were usually one, solid colour.
