In the Catechism of the Catholic Church, Paragraph 1417 states:

The Church warmly recommends that the faithful receive Holy Communion when they participate in the celebration of the Eucharist; she obliges them to do so at least once a year.

Was the “at least once a year” suggested to be done at Christmas or at Easter?

If only once a year, then during the Easter season:
Can. 920 §1. After being initiated into the Most Holy Eucharist, each of the faithful is obliged to receive holy communion at least once a year.
§2. This precept must be fulfilled during the Easter season unless it is fulfilled for a just cause at another time during the year.

I was taught missing Sunday (or Saturday) mass was a mortal sin??? So, does everyone go to confession before Easter mass?

Once a year - between Easter and Pentecost.

How poor is life without the Eucharist! Why focus on the bare minimum when you can receive immense spiritual riches from this great Sacrament - for free every day?

Don’t be stingy with God. Look how much God has given you.

You can go to Mass without receiving the Eucharist.

There are valid reasons for not receiving Holy Communion every single time you attend Mass. While the faithful are encouraged to receive frequently and worthily, the only frequency actually prescribed is the once-yearly “Easter duty” as it is called.

In the past, people spent a lot of time in mortal sin, or at least in a state unworthy to receive the Eucharist. Therefore for someone to receive it was a major life event. This kind of culture was undone by Pope St. Pius X at the turn of the 20th Century.

But I digress. This is yet another example of the Church, in her wisdom and largesse, having given us a generous and broad precept to observe and which we can easily meet and even exceed the requirements in our pious exercises of faith.

Are you confusing attending Mass and receiving Communion?

We are required to fulfill our Sunday Mass obligation (Saturday evening or Sunday) but we not required to receive Communion then.
Although it is strongly recommended we receive regularly it is only required once a year during the Easter period.
