So as I understand it (and please correct me if I’m wrong), you are allowed to receive communion twice in one day. Is the day considered midnight to midnight or a liturgical day, i.e., does Saturday evening vigil count as Sunday? If you go to two Masses on Sunday and the Saturday evening vigil, are you in the clear or is that three times in one “day”?

No, that’s “once on Saturday” and “twice on Sunday.”

Yes, as long as the second time is a mass you attend (as opposed to in another context). you can receive Viaticum even if you’ve already received twice in a day.

That is two times on Sunday and one time on Saturday.
 
The second time has to be during Mass as Mass is “higher” than a Liturgy of the Word with Communion (no consecration so just hosts given) or receiving at someone´s home who is sick.
