Recipe help: Gearing up for Lent

Hey all, this post might be a little early, but the readiness is all, so here goes:

My wife and I attend and are very active in the mission church at the University we both teach at. Last year we cooked a big communal meal for all the kids and our priest each Friday in Lent. These were big, mass-production type meals sans meat: Manicotti and stuffed shells, my wife’s potato pancakes (guys out there: marry a girl who’s half Italian, half Slovak. Trust me. Beautiful wife + pirogi + canoli=marital bliss) a big meatless chili night, and a baked potato night.

We’re doing it again this year due to popular demand, so I need some help. Any ideas on how to feed 30+ people a good meatless meal on the cheap? Any suggestions are welcome, and I’ll post some recipes as well.
 
Black Bean Chili

Red Beans and Rice

Soup and Corn Bread

Bean Burritos (do the beans from dried beans, you can cook them in the crock pot!)

Eggs - I love boiled egg gravy on biscuits or toast

Pimento cheese rollups

Tuna Casserole

Lentil Tacos

Lentil Tacos sound awesome (everyone loves a ‘build your own’ meal).

Also, I live in South Carolina. Pimento cheese is in my blood. I harbor suspicions that Christ freed his followers from Kosher laws so that, one day, Pimento cheese might be applied to hamburgers for the good of all mankind.😃
