Suppose someone received a sacrament (mainly baptism, confirmation, marriage, and holy orders for the sake of this discussion), or took vows in a first or second order, or made promises in a third order, while having serious doubts about the faith, but never completely renounced the faith, would the sacraments, vows, etc. be valid?

As long as someone has an intention to be baptized or to receive whatever other sacrament (provided they already received baptism), their intention should suffice for the validity of the sacrament. A person should be able to have that basic intention despite whatever doubts they may have about the faith. However, if the person is entertaining such doubts willfully and making no effort to overcome them, this could be mortally sinful and as such would make the reception of the sacraments illicit, but still valid.

If you are asking in regard to yourself or someone you know, you should ask a priest about it in order to receive guidance to act upon.
