This, I think, is the crowning example of Byzantine chant, and in English no less. The Divine Liturgy performed by My Lebanon Choir.
Also, The Dismissal Hymn of the Ascension, performed in Valaam Chant by the monks of Holy Cross Hermitage. It’s absolutely beautiful even on grainy cell phone video.
My favorite non-liturgical hymn would without a doubt be Agni Parthene.
Here it is performed in Valaam Chant, by the monks of, you guessed it, Valaam: www.youtube.com/watch?v=MoV2PZOsC-o
And in the original Greek Byzantine chant, by Simonopetra on the Holy Mountain (the division I to left and right choirs makes it stunning):

Though hast ascended in glory O Christ our God / and gladdened thy disciples with the promise of the Holy Spirit / and they were assured by the blessing/ that though art the Son of God / and Redeemer of the World
