Should a Catholic receive communion if he/she does not know that Mass is a sacrifice?
 
Lack of catechesis is not a reason to abstain from Communion. All of us are ignorant to some degree. It is a reason to read and study the Faith.
 
Does not one at least hear / say at every Mass: “May the Lord receive the SACRIFICE at your hands . . .?”
 
If a catholic who has reached the age of reason or has completed R.C.I.A. doesn’t understand the most fundamental teachings of the church there are bigger concerns than whether to receive the Eucharist.

I hope so because after RCIA and a good amount of personal study about the faith, I’m still not 100% sure what “it’s a sacrifice” even means. I mean I’ve read the explanations, but I find them highly arcane and obtuse, nor do I grasp the causality between Jesus being executed on a Roman cross and me being forgiven for my sins. I think I had greater understanding of these truths when I was a child than I do now.
 
If someone is mentally challenged, or perhaps suffering from dementia, and forgot this, that’s understandable.

But really, the Catholic should have never been admitted to 1st communion if they didn’t learn the basics.

If an individual is ignorant of this fact, but is capable of receiving instruction, that is a reason to charitably instruct. If an individual is culpably ignorant of this, meaning that he / she chooses not to believe, than that person is not in communion with the Holy Catholic Church and should abstain from receiving the Blessed Sacrament.
