Shouldn't a priest say "Virgin Mary" when reciting the Creed?

At a church I go to, the priest does not say the words “Virgin Mary” in the sentence: “He was conceived by the power of the Holy Spirit and born of the Virgin Mary.” Do you know why he might go silent for these two words?

No. You would have to ask him for his reason. But are you sure that he does go silent for these two words? In a church filled with people reciting the Creed, it would be difficult to know for certain what each person actually says or omits. If you cannot be certain, you should give the priest the benefit of the doubt.
