Various religious congregations are having something called spiritual/prayer/mass enrolments where the enrolled person is remembered by the community in the prayers/masses etc…
I understand the concept of it. Can any one help me understand what the canon law says about this?

There are many canons regarding the offering given for the celebration of Mass, of which the first is:

CIC
Can. 945 §1. In accord with the approved practice of the Church, any priest celebrating or concelebrating is permitted to receive an offering to apply the Mass for a specific intention.
§2. It is recommended earnestly to priests that they celebrate Mass for the intention of the Christian faithful, especially the needy, even if they have not received an offering.
Similarly in the eastern Catholic canon law (CCEO):
Canon 715 - §1. It is permissible for the priests to receive offerings for the celebration of the Divine Liturgy for the intentions which the Christian faithful make according to the approved custom of the Church.
§2. It is also permissible, if it is thus established by lawful custom, to receive offerings for the Liturgy of the Presanctified and for commemorations in the Divine Liturgy.
