Symbolism of Deacon and Subdeacon in the Extraordinary Form

In the Extraordinary Form of the Roman Rite, I was told that the deacon and subdeacon have symbolic functions. It is apparently evident by watching the interactions between them and the priest, and the functions they each undertake. Could someone clarify this for me and (hopefully) provide an explanation of their symbolism? Thank you.
