*shanny…others…did you catch Giada’s recent thanksgiving special? (it was aired this morning, I record her shows – but looks like an older version, because her baby is just a wee little baby in this episode, and now, I think she is around 2 yrs old) I think I’m definitely going to make two of the dishes…

One, was a side dish…almost like a bread pudding kind of recipe, BUT…she blended sauteed parsnips and butternut squash squares. IT LOOKS AMAZING! 🙂 I think that’s going to be my ‘new’ dish…

Second, she made a trifle…like chocolate mousse, and layers of pound cake, in a see through cake dish…wow…looked beautiful and delicious. She also drizzled orange liquor over the pound cake per layer, before adding the mousse, and I definitely think this could be a nice addition to the dessert buffet this year. She also made poached pears with brandy and icecream. :eek: That would be nice and light, if our guests want a lighter ending to the meal.

Well, all you lucky people eating a home-cooked meal, take a minute to think of me stuck at the Golden Corral for Thanksgiving dinner! :eek: DH is working there now, and when I told our hostess that he would probably not be able to attend dinner, she decided we should all go to the Golden Corral to be with him.

The silver lining is that we’re moving the turkey dinner to Christmas. Our hostess is a lovely, loving, wonderful cousin, but her idea of a delicious, festive dinner is not really anyone else’s. So, on Christmas, instead of who-knows-what from her crockpot, we’ll have a good turkey dinner (with pork & sauerkraut in the crockpot - mmm).

I’m in charge of dressing, cranberries & gravy. The dressing and cranberries are set in stone, but I’m always up for learning a better gravy. Anyone want to share tips? Especially for one without access to the turkey itself?

Mmmmm, you guys are making me hungry! 👍 It almost makes me wish I were making a big meal this year.

Since DH and I have 2 Thanksgiving dinners to attend (one for his side and one for mine) I am not making the meal. However, I think I will try this pumpkin roll recipe. A client of mine makes these (not sure if it’s the same recipe tho) and they are absolutely delish. I may also make a 2-layer cheesecake recipe I got from my MIL:

Bottom Layer:
1 1/2 lb cream cheese, softened to room temp
1 c. sugar
1/2 tbl vanilla
4 lg eggs

Top Layer:
24 oz sour cream
2 tbl sugar
dash of vanilla

Preheat oven to 350 (usually I do 325 to keep the crust from tasting burnt tho)
  1. Make a graham cracker crust for 9x13 pan and spread on pan (I just use 2 8" pre-made pie shells instead)
  2. Mix cream cheese, sugar and vanilla for bottom layer. Add eggs and beat until smooth. Pour into crust.
  3. Bake 35 minutes, or until center of cake is firm (I think 40-45 mins if you cook at a lower temp with small pie crusts like I do). While it is baking, mix the sour cream, sugar and vanilla for the top layer together.
  4. When the center of the cake is firm, remove it from oven. Let set for 5 minutes.
  5. Smooth sour cream mixture on top. Put back into oven for 10 minutes. Remove and cool before serving.
This is a really easy cheesecake and extremely delicious! It’s not quite as heavy as some cheesecakes which is good too. You should try this, Whatevergirl! I’m not exactly a domestic diva but it came out almost perfect the first time I made it (and it was my first homemade cheesecake too!)

OK, all you experienced Thanksgiving cooks! DH and I are hosting Thanksgiving dinner and I’m looking for a fairly easy way to roast the turkey. I don’t want to do any of the weird citrus stuff (I’m sure it’s good, but DH hasn’t had a turkey dinner for Thanksgiving for a while, and just wants traditional), and have had a few suggestions but they include rubbing the turkey with butter (which DH HATES and would freak out and possibly not eat the turkey) or a salt brine…which I’m just not excited about. Traditional, simple? All the recipe websites have fancy non-traditional recipes for turkeys, so I was pretty disappointed. I am really excited, I love hostessing…DH and I have only been married for 6 weeks and MIL has had every big meal for 38 years. No pressure or anything… :eek::eek:
 
My company will be giving all employees turkeys again this year…very nice of them. I still have last year’s in my freezer tho…my mother took a turn and eventually passed away on Dec 1…

I make a wonderful turkey, involving butter under the breast of the bird, bullion, spices- the first time I made it, it fell off the bone!

Also,
Herb stuffing with mandarin oranges (a family tradition)

My own cranberry sauce using fresh cranberries

Peas (I don’t know why, but it’s always peas…I like to mix pearl onions in as well)

Sometimes I do my garlic mashed potatoes, but not recently.

For dessert, we have Turtle Pie. This I buy, and can relax and indulge!

do an internet search for Homestyle Turkey the Michigander Way. This is the recipe I first used…now I have evolved into my own…it is fantastic and EASY. While it does use butter, it keeps the breast moist. I promise:thumbsup:

If that doesn’t do it…they have many others…
