Where does the Ark of Noah and the Ark of the
Covenant coincide in the Bible, Mary is also
a symbol of the Ark of God. How do I explain this
in my Christian witnessing to non-Christians.

To my knowledge coincide means to happen at the same time. Perhaps a different word usage would be appropriate? All three “arks” were seperated by thousands of years. I’m not sure exactly what you mean…

As to Noah’s Ark and the Ark of the Covenant, look into typology. Both were “types” of Mary. Meaning they both prefigured the Blessed Mother, they gave a foreshadowing of what was to come. As Eve was a “type” of Mary, as Adam was a “type” of Christ, as Rebecca was a “type” of Mary, and so on.

Now as to Mary being a symbol of the ark, you got it backwards my friend, both the Old Testament arks were symbols of Mary. Remember the OT is fulfilled in the New. Everything in the OT is leading up to and talking about the NT. The Blessed Mother is the literal and real ark, she carried God Himself. She is the ark! She carries our salvation, her name is Mother of Mercy, literally she is the Mother of Mercy! As St Louis de Montfort said she carried the one that the heavens cannot contain.
 
I think the word some of you may be grasping for is “prefigured.” Meaning that events seen in the Old Testament are fulfilled and completed or perfected in Christ’s coming and throughout the New Testament.

Noah’s Ark can be seen as prefiguring the one baptism that saves us. Just as Noah’s family was saved from God’s wrath in the ark, baptism cleanses us from our sins. Take a look at the readings from the Easter Vigil and you will see various allusions to how water was used by God to save from Noah to the Israelites fleeing Pharoah’s army.

The Ark of the Covenant was built to house the 10 Commandments or literally God’s own words. It doesn’t seem to me to be a stretch to see how Mary is a more perfect Ark by carrying Jesus, the word of God made flesh.
