Do we have any dates (time) that the books of the Bible where put together as one book ? And how can we say it was done my Catholics ?

A council in 399 comes to mind. The Trinity was defined in 325 at another council. Simply ask who you are talking with, what year they think the Roman Catholic Church started? Often their dates will be around 300 AD.

The earliest manuscript “book” evidence for a complete Greek New Testament is Codex Sinaiticus, from the 4th Century, acquired by Tischendorf fin 1859 from the Monastery of Saint Catherine on Mount Sinai.

The earliest manuscript “book” evidence for an entire Greek Bible, OT and NT, is **Codex Vaticanus ** from the mid 4th. C., which has been in the Vatican Library for unknown centuries (at least 530 years)…
