I have two difficulties concerning the creation of the universe by God, can anyone help me out?

Difficulty 1:

How did God change from a state of not creating the universe to a state of creating it, if God cannot change?

One answer would be only his essence is immutable - his will can change, is this valid (non-heretical)?

Does not change require time? God exists out of time, so even if we were to say that his will can change (but not his essence) how would it in the absence of time?

No. His will is identical to His essence.

Therefore, God was always in the “state” of creating the universe.

Then according to you the universe would be eternal, this contradicts Catholic dogma. (please correct me if I mis-interpreted)

Yes, you misinterpreted. God’s eternal will (which never changed) was for the universe to have an existence in time.
