The Eucharist as Being imitators of Jesus

I was taught and have learned that when Jesus said, “Do this in memory of me.” He was instituting the Eucharist. But I was wondering if maybe Jesus was also telling the apostles and all of us to immate his self giving. Essentially give of our own body and blood for the sake of others. What does everyone think? Am I within the bounds of legitimate Catholic teaching or doctrine or what have you?

I think He told us to do this (imitate his self gift) in the mandatum on Holy Thursday: if I your Lord and Master have done this, so also must you do. He was referencing the washing of the feet, but the beautiful mandatum chants are part of the Holy Thursday liturgies and kick off the Triduum which is really one event consisting of Holy Thursday, Good Friday, and Holy Saturday. In that wholeness, yes - I agree with you that Jesus instructs is to imitate His self giving. Specifically via the words “do this is remember an example of Me” - I don’t really think so.
