I fail to understand why people use the phrase “God and Jesus”… I mean, isn’t that redundant? When did this start appearing… and why?

It is simply because we humans have limited abilities to comprehend the complete majesty of the God head, the Trinity. Some people focus too much on Jesus the Savior and ignore sometimes the Father and the Holy Spirit. We do this because we can better identify with Jesus because He came into the world in a human body, like ours. We all know in our best intellect that God is a spirit, but that is hard for many of us to fathom, so Jesus with His human body is easier for us to relate to.
Yes it is very redundant, unless you believe Jesus was only human and not divine. As I believe it was Fr. Corapi and possibly others who said, God only spoke one word, and that Word was Jesus.

It would be better to say “The Father and Jesus” since “God” is three persons.

I will suggest that some people will admit to there being a God.
and some will even think about the Holy Spirit or Holy Ghost.
and not have alot of problems with either. Because in a sense although they are particular individuals, they can also mean a concept or a idea.
But bring up the name of Jesus, then the debate starts. There is no concept or idea there. Only a particular individual.
Because Jesus honored His Father (who is God), the Father honored the Son, and gave Him what the Father has.
A son would still call his father dad, right?
Jesus can be honored by calling Him God (after His Father), because God His Father wouldnt want it any other way.

It is short for “God [the Father] and Jesus [the Son]”. It is especially necessary to distinguish that Jesus while having a divine nature ALSO has a human nature and specific mission on earth.
For God [the Father] so loved the world, that He gave His only begotten Son , Jesus], that whoever believes in Him shall not perish, but have eternal life. -Jn 3:16
