Tofu and vegetarian dishes

It’s been ages since I made the BBQ tofu, but I’d guess 30 - 40 miuntes @ 350* ought to do it. I doubt any more time than that is necessary. You want the BBQ sauce to be a bit dried out, more sticky than saucy I guess is how I’d describe it.

Here’s the Lentil pie recipe, it’s definitely a man pleaser, my hubby loves it:

Forties Lentil Pie

3/4 c. red lentils (I’ve used plain brown ones too, no big whoop)
1 onion chopped
1 & 1/2 c. mashed potato
2 tbls chopped fresh parsley
~ 12 oz. can of sweetcorn, drained
2 tbls chutney
salt and pepper
onion rings to garnish

Rinse and place the lentils with the onion in a pan. Cover with cold water, bring to the boil, reduce the heat and simmer until tender, about 25 minutes (make sure the onions are cooked thru, no bite left to them).
Drain thoroughly and mix with the potatoes, parsley, sweetcorn, chutney and salt and pepper to taste. Spoon into casserole dish and cook under a broiler till golden & crisp (I usually just bake it @ 350* till it’s a bit crusty on top). Garnish and serve.
I may have to try this …I was just thinking of lentils :yup:

I just became vegan and I heard that you can replace eggs with tofu, a couple of bananas, or a can of applesauce.

As far as tofu goes, find some tofu (firm or silken) to make a tofu scramble, and vegan desserts.

Here’s a recipe for tofu scramble.

Heeeeyyyy…a tofu scramble…that would be really easy to whip up–thank you for the idea!
 
I wanted to add onto the poster who talked about tofurkey…I bought tofurkey the other day, it is a blend of sun dried tomatoes, and spices to give it a sausage taste. It really was quite good mixed in with this eggplant casserole I made.👍

I am vegan and use ground flax seed in place of eggs in some recipes.

Did you get the Italian “sausage”?
I love the luncheon “meats” and “sausages”. I just purchased the Tofurky thanksgiving meal for DH and I’s anniversary. I am hoping it is as good as everything else!
 
I like Field Roast’s grain meat. The meat loaf is really good! No soy in it, though.

Yes–I did:thumbsup: It was very good–tell me about this thanksgiving tofurkey…it sounds so interesting!!

I did not like the celebration roast. I love the meatloaf and sausage. I don’t think the corn patties are worth the money. The cutlets are good but not worth writing home about. Compared to Boca Burgers they’re delicious! I’m really looking forward to trying the porcini dijon cutlet. They are expensive, so I choose wisely and pick up a Field Roast food as my splurge item every so often. Ever since a friend introduced me to them, I’ve been in heaven!
 
Try Eggplant Omelet:
Preparing the eggplant.
Select elongated, medium sized eggplant.
Grill eggplant until skin peels off and set aside to cool. Remove skin.
Preparing the egg dip.
Scramble egg in separate bowl. Season with salt and pepper to taste.
Frying.
Without cutting the stem, mash the cooked eggplant and dip in seasoned scrambled egg. (Stem can be used as handle)
Fry like an omelet.
 
I’m mildly allergic to soy, so I can’t eat much tofu without eventually breaking out into hives… :o
But thanks for all the links and information… it’s hard to find good vegetarian dishes that don’t have any soy! 😦
