Turkey leftovers--any good recipes?

What do you do with your leftover turkey? I usually end up making soup and/or turkey pot pie. Are there any creative ways to fix leftovers?

How about turkey salad served in pita pockets. Or served warmed in croussaints(sp?) Or turkey salad in baking dish, sprinkled with crushed (not too small) potato chips, covered with grated cheese. With a green salad, this is pretty good.
 
Oh please…there is NOTHING like cold turkey in the middle of the night, used to scoop up leftover cranberry relish (not sauce or jelly) and/ or mashed potatoes, by the glow of the fridge light.:cool: Simple is best. Use your fingers. Do not deny yourself this pleasure!!!

Otherwise, I suppose you could add it to:

-pizza.
  • mac n cheese.
  • celery, mayo and onion for turkey salad.
  • some sort of pasta with a white sauce.
  • some sort of chicken or turkey broth with frozen veggies and noodles.
 
My Mom used to make Turkey Croquetts. Turkey in a white sauce then shaped into a cone, breaded, and browned in oil.
 
I shred the leftover turkey into the leftover gravy, heat it up and serve it over rice. —KCT
 
I love it diced in a lettuce salad with:

mixed greens
Granny Smith apples
craisins
pecans or walnuts
cranberry-orange vinagarette dressing

YUM!
 
I saw this place on Food network that makes a Thanksgiving sandwich called the Dickens. They heat up a mound of stuffing and the turkey portion on the grill (which is really a giant pan- not gril lin the sense of charcoal or propane), then serve it in a large roll with cranberry jelly.

“This is a great recipe for leftover turkey. Even those who say they don’t like turkey will eat this. May be assembled in advance and frozen: heat covered dish at 350 degrees F (175 degrees C) for 1 1/2 hours.”
INGREDIENTS:
1 pound cooked turkey, sliced
2/3 cup sliced onion
1/4 cup butter
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground white
pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon ground mustard
2 cups milk
1 cup shredded sharp Cheddar
cheese
2 tablespoons chopped
pimento peppers (optional)
1 (4.5 ounce) can sliced
mushrooms
2 (8 ounce) packages angel
hair pasta

DIRECTIONS:
1.Cook the pasta as directed on package. Drain.2.In a medium saucepan, cook and stir onion in butter or margarine over medium heat until tender. Blend in flour and seasonings. Remove from heat. Gradually stir in milk; stir until mixture thickens. Add 2/3 cup cheese and pimento, stirring until cheese melts. Add undrained mushrooms to cheese sauce.3.Place layer of pasta in 12 x 8 inch baking dish. Cover with layer of turkey, and then a layer of cheese sauce. Repeat the layers. Sprinkle remaining 1/3 cup cheese over top.4.Bake at 400 degrees F (205 degrees C) for about 25 minutes.
