Was Jesus, during his earthly life, involved in the process of creation?

Since everything is created through God the Son as we profess in the Creed, was Jesus the man (while still being fully God) still involved in the continual creation of the world?

Creation is completed by the end of the 6th ‘day’ … And on the 7th ‘day’ God rested…

Then God said, “Let us make mankind in our image, in our likeness, so that they may rule over the fish in the sea and the birds in the sky, over the livestock and all the wild animals, and over all the creatures that move along the ground.”

So God created mankind in his own image,
in the image of God he created them;
male and female he created them.

God blessed them and said to them, “Be fruitful and increase in number; fill the earth and subdue it. Rule over the fish in the sea and the birds in the sky and over every living creature that moves on the ground.”

Then God said, “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds in the sky and all the creatures that move along the ground—everything that has the breath of life in it—I give every green plant for food.” And it was so.

God saw all that he had made, and it was very good. And there was evening, and there was morning—the sixth day.

Thus the heavens and the earth were completed in all their vast array.

By the seventh day God had finished the work he had been doing; so on the seventh day he rested from all his work. Then God blessed the seventh day and made it holy, because on it he rested from all the work of creating that he had done.
 
What I mean is God didn’t just create the world, and just let it “do its thing”… He is still actively involved in the work of creation; human souls are still being created, the works of nature are still being guided by His hand, etc.
 
There’s nothing in Scriptures or Magisterium suggesting what’s being asked:

Scriptures and the Church refers to “Creation” as it would to the Universe - including Life Forms.

Apostles Creed
I Believe in God the Father Almighty, Creator of Heaven and Earth…

[Genesis 1:]
In the beginning God Created the heavens and the earth.

[Exodus 20:]
"For in six days the LORD Created the heavens and the earth, the sea and all that is in them, and rested on the seventh day; therefore the LORD blessed the sabbath day and made it holy.

Doesn’t God create human soul’s at their conception though? Since our souls aren’t material souls like animals, doesn’t this mean they are still being “breathed” upon us at conception “making us living beings”? Every time a new human arrives?
 
The universe and all of the creatures are continually sustained through the will of God, which includes the Son.

No. Creation was pre-incarnation. The Son, that is the second person of the Trinity was involved in creation, but at that point in Salvation History he had not yet been made man.
 
John 5:17 says He is, and since God hasn’t rested yet, we are still in the 6th day of creation.

“Working” and “rested” in the context of scripture are very different things.

“Rested”, as Genesis told us God did on the 7th day means His creative endeavors were complete. Yes, he does continue to “work”.
 
As the OP said, God is still creating with the conception of each child. So He has yet to rest from creating, as Genesis 2:3 says “So God blessed the seventh day and hallowed it, because on it God rested from all His work which He began to do.” Notice it says ALL His work.
 
In him we live and move and have our being. (from Acts 17:28)

I just noticed 17:28 makes 1728, which is 12x12x12. Must be good.

God as creator and conserver is pretty well established in doctrine.

As for Jesus, yes. As a person, through his Divine Nature, he was still involved in the creation and conservation of the world. But this is not a power or activity that could be accomplished by his human nature. So, as a person who is divine, yes, he was involved.
 
Also, from the Catechism of the Catholic Church.
God upholds and sustains creation

301 With creation, God does not abandon his creatures to themselves. He not only gives them being and existence, but also, and at every moment, upholds and sustains them in being, enables them to act and brings them to their final end. Recognizing this utter dependence with respect to the Creator is a source of wisdom and freedom, of joy and confidence:

For you love all things that exist, and detest none of the things that you have made; for you would not have made anything if you had hated it. How would anything have endured, if you had not willed it? Or how would anything not called forth by you have been preserved? You spare all things, for they are yours, O Lord, you who love the living.
