Was Jesus risen at Saturday night or Sunday morning?

That’s a novel interpretation. Where are you getting this from?
First I study the Scriptures. Second, Jesus said He came to fulfill the law (and this is part of the law) Matt 5:17. Third, Jesus is the grain of wheat buried in order to produce an abundant harvest. The first fruit feast happened on Easter. When was the grain harvest waved? And an earthquake is the obvious mechanism for waving the first fruit of Jesus’ harvest. I have been writing a book on Jesus fulfilling the Scriptures on the third day as Paul said was of first importance 1 Co 15:3-4.

These are just your personal opinions. Not the teaching of the Church or anything that any theologian has suggested.
My position is supported by Scripture and the Church does not give authoritative rulings on things like this, and has only given an authoritative interpretation on a few verses. Grace and Peace, Bruce

Catholic theologians – and the Church – certainly do discuss these kinds of things!

So, if it’s a novel innovation of yours, I think I’d recommend that you first research whether the Church has considered this angle. If it hasn’t, in its consideration of the sacramental / sacrificial aspect of Christ’s passion, death, and resurrection, I think you might do well to wonder what the implication of such silence on this topic might mean. 😉

Gorgias,
re: “If the Jewish understanding of the ‘third day’ is the day that begins at sunset Saturday and ends at sunset Sunday… then why would ‘Saturday before midnight or Sunday after midnight’ make a difference?”

Because there would be a difference of some 24 hours between them.

There’s literally two seconds of difference between 11:59:59pm (“Saturday before midnight”) and 12:00:01am (“Sunday after midnight”). We’re talking about the difference between Saturday after sunset and Sunday before sunrise. For us, there’s a difference; in the context of the Gospels, it was the same day.

Gorgias,

Sorry, I misunderstood; I thought you were referring to a sunset to sunset calendar day.
