On Saturday at 7PM we attend a wedding Mass. (The three readings were not the ones of following Sunday) Is the day of obligation fulfilled with the assistance of that wedding Mass and communion?

The obligation to attend Mass is fulfilled by attendance at a valid Catholic rite on the day of obligation or the evening of the previous day. The readings do not matter. If they did, you couldn’t fulfill your obligation at the Extraordinary Form or the Byzantine Liturgy, since they don’t follow the same readings. Attending a wedding on Saturday evening fulfills the obligation. Also, receiving communion is not necessary to fulfilling the obligation; one is only obligated to receive once a year, during the period from Ash Wednesday to Pentecost, in what is known as the Easter Duty.

Can. 1248 §1. A person who assists at a Mass celebrated anywhere in a Catholic rite either on the feast day itself or in the evening of the preceding day satisfies the obligation of participating in the Mass.

The readings have no bearing on whether or not you have met the obligation, nor does receiving Holy Communion.
