What am I going to make for dinner tonight?

HELP. I need some ideas and cant stand the thought of eating yet another boring meal of chicken something or other.

I was thinking a meal of entirely just appetizers but not too hard to make.

I will possibly be having to feed a total of 5 tonight (2 are children).

HELP. I need to buy the stuff and get it together soon. All I can think of so far is NOTHING!😦
 
Get some vegetables you like and stir fry 'em. I always start with a touch of chilli and loads of garlic, but you might not like them.

Add some tuna from a can.

Boil up some penne pasta

When the pasta is cooked, pour half a cup of the water into the stir fry.

Stir in some pesto sauce to the pasta.

When all is cooked, stir it all in together.

Garnish with fresh parsley.

Viola!

Problem is my husband pukes(gags at the least) at the smell of tuna. Or salmon in a can.

I cant even get him to eat shrimp, unless its fried. He will only eat fried fish.

And I dont know if their kid will like tuna either, we are talking toddlers here, and that makes it HARDER.😦
 
Well you could use pork diced up, chicken and rashers of bacon cut up into strips!

Ooo-- What about Carbonara? Fresh cream, grated cheese and smokey bacon??
 
stir fry veggies in teriyaki ginger sauce, or any flavor stir fry sauce your kids like. The broccoli slaw mix is good for this (kids often like this better than bean sprouts). Wrap in leaf lettuce or bibb lettuce leaves, and have dipping sauce available, a bit messy but kids like making their own roll-ups and dipping. You can add ready to eat shredded chicken or pork to this (we buy it in tubs for enchiladas here) or slice meat in thin slices and toss with the veggies. Slivered almonds or peanuts, if your kids can eat them, also good in this.

quick brown rice, add a 10 oz box of frozen mixed veggies, and a bit of soy sauce for instant “fried” rice. frozen egg rolls or pot-stickers and you are good to go.
 
If it’s a more informal thing, do make it yourself pizzas. Have a bunch of toppings available, and small pizza shells, and have everyone “decorate” the way they like and toss them in the oven. A fun thing to do together and keep the kids occupied.

I just dont know what kind of brand dipping sauces to buy that are good. I dont get that fancy.

I forgot is it Lizzane? I wish I could do the pizza idea but our house is hot today since my better half has not done a thing yet about getting our barely working window ac’s going so I cant heat up the house its nearly 80 right now. My guests would be stiffling here.:o

^Or, you could do pigs in a blanket! Get the crescent rolls (I always get the store brand, cheaper) in the tube, wrap up a hot dog in each triangle of dough, and bake! You could even throw in a piece of cheese on each crescent too before you bake it.

Get a package of shredded cheese, a can of refried beans, a tub of sour cream, chop up a tomato, shred some iceberg lettuce, get a jar of salsa. Cook up some ground beef, and then just throw everything on the table and let them make their own plates however they like.

You could also make a quick and easy queso with salsa & Velveeta cheese in the microwave, and serve it with some tortilla chips.

I used to love taco night when I was little.

Of course there’s always taco salad… (use crushed tortilla chips)

My kids like salads! Especially a chief’s salad, lettuce, boiled eggs, ham, cheese, carrots, cucumbers, ranch dressing…

That’s a favorite in this house especially on a hot summer (or spring) day with watermelon for dessert.

Kids are 5 and 6 and have enjoyed a chief’s salad for as long as I can remember. (Even when they were toddlers {15 months and up})
 
If you don’t want to heat up the house, use your crock pot or grill 🙂

DH does a killer grilled meat loaf. Make up meatloaf using your regular recipe, put your grill on med heat (over indirect coals if you use charcoal) and put down foil. Put the meat loaf on the foul (or use a foil pan) - close the lid and let it cook for about 45-hour or til done with a meat therm.

For the crock pot, put in boneless skinless chicken, cubed potatoes, cut up carrots, cut up onions and a can of either broth or cream of something soup. Cook it on high til done. Yummy chicken stew.
 
For a quick Italian dish just make up a package of macaroni and cheese. Brown ground beef and add your favorite spaghetti sauce. Dish out the mac and cheese and top with ground beef and spaghetti sauce mixture. If you’d like, top that with grated parmesan or mozzarella cheese. It’s quick and tasty, too!
 
If you want to do a dinner of finger foods, try these:

Frozen Meatballs, put these in the crock pot with either spaghetti sauce or cream of mush soup (one way is italian, the other sweedish)

Pinwheels - in the food processor, mince up some green olives and deli ham. Mix these with cream cheese and spread on tortillas. Roll up the tortillas and slice into pinwheels. (The cream cheese mixture can also be used as a cracker dip).

Queso dip - velveeta and a can of Ro-Tel or Salsa.

BBQ weenies - Lil Smokies in BBQ sauce

Veggies - celery, carrots, broccoli, etc with ranch dressing

Fruit with yogurt as a dip
 
Quesadillas are easy too, just two flour tortillas filled with cheese and whatever else you like on the inside, grill them on each side till the outisde’s a bit brown, and the cheese is melted on the inside, then cut them into wedges and serve with queso and sour cream and salsa for dipping.
 
We do individual pizzas on the grill and it is always a hit!
We buy the dough from our favorite, neighborhood pizza place and divide it into individual sizes. Roll it out and throw it on the grill. It only needs to cook for a couple of minutes then turn. Immediately top with sauce, toppings, and cheese. Once the cheese melts, it’s done. It’s totally fast, fun, and easy!
 
Here are some options since you don’t want have hot house guests!

Get those fancy rolls from a deli and make sandwiches. You could get different types of meats and cheeses. Put it all on nice plates and it makes plain ol’ sandwiches look fancy!

Make a veggie tray. Get summer veggies like squash. Get all the bright colors.

For dessert you could have different fruits. If you have time you could get fruit and little skewers and put the fruit on them.

Wow, I am so happy so many responded and I am printing off the whole thread and will keep it handy until I try all the ideas (even fighting fats one for me!😃 I dont care if I have to make 2 dinners to try that some time)

I just need to ask one last question. Why dont we have a food section in the forum to trade recipies or ideas and test them out and give our thoughts?

I think it would be a great idea. I just made some desserts last week from Jello.com and I did the strawberry one with a pretzel crust and cream cheese center layer and it was darn good.

Just a tip.
 
There have been lots of threads for recipes before, I especially liked the one we had for Lent, they dug up last year’s and combined it with this year’s thread, so it had lots and lots of ideas. That thread was in the Spirituality forum. Maybe we could convince one of the mods to make a sticky thread for recipes in the family life forum.

Then maybe they could publish a Catholic Answers Family cookbook, taking recipes from the forum members. I’d probably buy a copy for my bookshelf.

What a great idea!

And I would have never thought to look in the spirituality forum for food ideas.

But, I see why it went there. I would buy it too! If the money went to CAF or to the hungry children I would be totally cool with that.:cool:

I think I will have enough extra income to give CAF some money soon. But, its tight now for us since I have been a stay at home mom amoung other factors.

But, something like a cookbook I could try to swing for sure, and its essential for me since my mother was a lousy cook and I used to like to cook years ago but now I hate it, and am out of touch with actually caring anymore. But, slowly I am trying again.
