Veni Creator Spiritus for me. I sing it for midnight prayer.
 
Ut queant laxis (St John Baptist): exquisite melody. Especially the verse about John recognising Jesus from within the womb. There’s an English faux bourdon for this verse which is particularly beautiful.
 
I like the Missa Luba version of the Sanctus and Agnus Dei sung by Les Troubadours du Roi Baudouin .

The Sanctus is based on a Bantu farewell song .

The Agnus Dei is like a typical Bena Luluwa song, such as might be heard around Kananga in the DRC .
